Eggless Molten Cake

It is a Spring break here and keeping D busy in what she loves doing is a big task. She loves baking and It’s been a while we haven’t baked. So while I was browsing for an eggless recipe, I bumped into the recipe by Shipra Khanna (MasterChef India Winner Recipe here). It is a simple & straightforward recipe.

The cake was super delicious, moist and not so sweet even with frosting.

Kalayile Phov (Mixed Flattened Rice)

IMG_6908This dish is typical in all Konkani household and usually served for breakfast or as evening tea-time snacks. My mom would make this as after school snacks…tastes best with masala chai (Indian spiced tea).

Kalayile (is Konkani word & means “Mixed”) and Phov (means Poha in Hindi and Flattened rice in English). This dish is prepared when in a hurry and made in Konkan places as daily snacks as it keeps you full for hours. All you need is the ready Poha Masala powder (Spiced powder), Thin Poha, Coconut, Jaggery, salt and the best part is no cooking required.

Bamboo Shoot & Sprouted Green Gram Curry

Called as “Mooga (sprouted green gram) ani Kirlu (bamboo shoot) Ghasi” in Konkani. Konkan is the section of the western coastline of India covering the coastline of Goa, Maharastra, and Karnataka.

Just in time for Ramadan!

Saffron rice pudding, known as Sholeh Zard in Persian and is traditional Persian dessert made with rice, saffron, sugar and rose water.

I love the color of the pudding… Yellow! so perfect for the Summer and yes the Saffron. I love using saffron for the color it gives to the dishes and sometimes in my tea. I used the Saffron given by a Persian friend and was wanting to use for very special recipes like this one.   Continue reading

DABELI – (Indian Spicy Burger)

DABELI is an Indian snack food originates from Kutch region of Gujarat state. It is made with boiled mashed potatoes mixed with special dabeli masala, this mashed potato is then placed between pav (Indian bun)…served with spicy green chutney, a tangy & sweet :dates & tamarind chutney (kajur Imli chutney in Hindi) and red garlic chutney (lasoon ki chutney) and topped with chopped onions, roasted peanuts, pomegranate arils and Indian sev (a thin crispy noodles)1-Dabeli

Salsa

The recipe features Pancake made with Chickpea flour served with the spicy tangy salsa giving the usual Indian Cheela (this what it called in Hindi) a twist. Usually, Cheelas are served with plain yogurt or spicy green chutney or Indian spicy pickles.

In Indian cooking, many dishes are made with chickpea flour like Bhaji/Fritters, Cheela, stuffed in bell peppers etc. Chickpea flour is high in protein and its gluten free

Bright Powerful Pancake

Kids love bright colorful food and so does mine lill D too.

D has a very strong perception of food (anything bright red is Tomatoes & chillies and hot, green means green chillies, Maron/brownish means with loads of Indian spices). It is quite challenging to convince her to taste the pallet been served and not judge by looks/color.

Well! I don’t blame her, as human we all have the certain expectation of how our food should look and then taste. Our sense of taste is often fooled by our sense of sight. So to make our food look bright and colorful, I try to color our food with natural colors.

D loves pancakes and I added beet puree to give that blasting powerful pink color. And yes I get her to help me with whisking so she knows what ingredients went in making.

A Comforting Veg Orzo Soup

I call it a comforting soup because it’s quick and one pot meal. A big hit at our dinner table.

I like to ask my D’s what they would like to eat for dinner? the dinner is the only meal we get to eat together during weak days. Most of the times, my tiny D says Pasta or Soup even during steaming hot days. Hence this recipe- a combination of orzo pasta, vegetable broth, and fresh assorted veggies. Lot of the soups call for corn flour to make it thick but I rather consider using orzo or oats as a healthier option.

The charm about this meal is- it’s ready in just 30-40 minutes. Great for dinner when in a hurry. Continue reading

D’s birthday @ Siddharta Lounge

Last night bringing in Big D’s birthday at Siddharta Lounge, Grosvenor house, Dubai Marina.

The lounge is Rooftop style/Terrace style seating with pool at the entrance and the other side with the stunning Marina and The Palm view. Great place to chill during winters but that shouldn’t stop you not going there during summers… they have coolers around. They do have a classy indoor seating too. We choose a seat overlooking The Palm.

The décor is all white theme with dim lighting. Love the vibe and yeah off course…. THE FOOD.
